A taste of Italy

The menu at Theo Randall’s is truly seasonal, changing monthly. Each month takes diners on a culinary journey to a different region of Italy. I visited in April, the month of Liguria at this stylish Mayfair establishment to explore the regional dishes as part of a five-course tasting menu with wine pairings no less. The menus are inspired by Head Chef Theo Randall’s travels throughout Italy, spanning over the last 20 years, which covered Puglia and Tuscany to Liguria, Lombardia, Campania and Sicily.

What’s on the menu in April

We were welcomed by an excellent glass of Prosecco, from Veneto, and couple of other wines on the list had been sourced from outside Lombardia. Our April menu’s antipasto was fresh pesto with buffalo mozzarella, roasted new season asparagus, farinata and pecorino. Pairing with Poderi dal Nespoli Trebbioano Biologica, Rubicone IGT 2022.

After the perfect spring antipesto an equally wonderful Pansotti con salsa ai fungi followed. This was fresh pasta stuffed with mixed green and ricotta and Italian sausage, porcini and portobello mushroom sauce. This was paired with Laura Aschero Pigato Riviera Ligure di Ponentaa 2022.

Our main course was a incredibly succulent Scamone di agnello – roasted lamb rump with artichokes, potatoes and leeks with jus salsa verde.

The pudding sounded too delicious to skip, and luckily the courses had been a sensible size rather than on the large side. So we ended our superb dinner with a Torta Sacripantina which is a Genovese sponge with maraschino, crema di zabaglione and fresh raspberries.

About Theo Randall

Theo launched his restaurant at the InterContinental on Park Lane in 2006 and it has been an upbeat story ever since. His rustic style and produce-centric, and always seasonal, food has earned him many loyal followers and plenty of rave reviews since the start.

He was previously the Head Chef at the River Café, the creation of the legendary Ruth Rogers and Rose Gray MBE. During his near two decades at the River Café he ventured on a year’s secondment to California to cook alongside Alice Waters at Chez Panisse in Berkeley. He returned with new ideas and inspiration from the bountiful Californian produce he had been working with. It was under his patronage that the restaurant received its first Michelin star in 1997.

Despite the fame and accolades Theo has enjoyed he still remains true to his culinary roots and can be found at the restaurant during most services.

Private dining at Theo Randall

As one of London’s most sought-after locations for events and private dining, Theo Randall at the InterContinental offers plenty of dining options. Choose from the Puglia Dining Room for up to 18 guests or the Amalfi Dining Room for up to 40 guests. Both private dining rooms can be connected to accommodate up to 58 guests.

Alternatively, choose to hire the entire restaurant which can accommodate up to 165 guests. InterContinental London Park Lane also boasts a dedicated events floor where guests may enjoy a Theo Randall designed menu with expansive views over London.
