Tottenham Hotspur Stadium is changing the game when it comes to food

Food=at-Tottenham-Hotspur-stadium-Chef-Mark-Reynolds-interview

Under the guidance and expertise of Executive Head Chef and National Vice Chairman of Craft Guild of Chefs, Mark Reynolds, Tottenham Hotspur Stadium is changing the game when it comes to food.

Using only the highest quality local suppliers and the freshest produce, discover a plethora of carefully curated menus featuring everything from Pan-Asian-inspired street food to nine-course fine dining with sommelier-paired wines. Modern or classic, savoury or sweet, we create dishes that will satisfy all tastebuds and enrich any event.

A few words from Mark Reynolds, Executive Head Chef

As a Club, we feel strongly about inclusivity, which is reflected by the food we serve. From gluten-free and plant-based options to a reduction of 25 percent of meat in all food served across the Stadium, we take pride in serving cultured, high-standard food that caters to all.

โ€œTottenham Hotspur Stadium has joined the UN Race to Zero, committing to halving carbon emissions by 2030 and becoming net zero carbon by 2040.โ€

All ingredients I use in the stadium are sourced locally from suppliers based in Britain. The Club is committed to using local businesses as not only does it benefit them, but the fresh produce results in better food quality. Sustainability and waste-reduction is really important to us too. A great example of how we reduce waste is by feeding waste grain left over from beer to pigs which will feature in pork dishes served at the Stadium.

What interesting facts can you share about food at Tottenham Hotspur Stadium?

We have our own pastry kitchen where we make our famous sausage rolls, cakes and pastries in-house. It certainly comes in handy for the 10,000 pies we bake on matchday! We also have our own Beaverton brewery at the Stadium.

โ€œIโ€™m a massive advocate of being creative when it comes to reducing waste, and happy to see that beer isnโ€™t just limited to pint glasses. I also use it in batter, bread, chutneys, gravies and sauces, so thereโ€™s a little bit of Beavertown in almost everything!โ€

What is your signature dish?

I love food and I love experimenting with food so itโ€™s always hard to decide, but if I have to settle on one dish, I would say lamb ravioli. Not like the pasta dish per se, the filling is made of lamb breast and lemon-scented goat’s cheese finished with mint salsa.
